Croquettes are nothing but light and simple appetizer which is very satisfying and fulfilling food. The texture is so creamy inside and crispy on the outside loaded with loads of chicken vegetables and cheese. umm sounds so yummy.

Tips/Notes:
You can make this in large numbers and freeze it for future use. A plus point is we just need to remove from the freezer, thaw it, then bakes it or shallow fry and enjoy it.
Chicken n potato Croquettes
Ingredients
- 2 cups mashed potatoes
- 2 cup shredded chicken I used chicken breast pieces boiled in salt and pepper and 1 tsp of ginger and garlic paste.
- 1 cup mozzarella cheese
- ½ cup carrot finely chopped
- 1 Onion medium size finely chopped
- Salt n pepper to taste
- Kiri cheese 2 blocks/cube
- 1/2 tsp Parsley
- 1/2 tsp Chives
- 1/2 tsp Garlic powder
- 1/2 tsp paprika
- 2 eggs beaten to dip croquettes
- 4 boiled eggs cut into 4 pc
- 2 cups bread crumbs to coat
- Oil to shallow fry
Instructions
- First step is take a pan add in 2 tbsp butter/oil and saute chopped onion and chopped carrot,add in salt and pepper and cook until veggies get tender..let it get cool completely.
- Secondly,take a wide/large bowl, combine shredded chicken, mashed potatoes, cheese blocks and mozzarella. Add in sauteed onion n carrot and mix well and give any desired shape. I have done it in a sausage shaped croquettes, add boiled eggs in center and cover it. Dip it in egg and coat it with breadcrumbs.
- Third and final step is to shallow fry the croquettes..take a large pan add in oil and cook the croquettes for 2 minute each side at a medium flame. and serve it warm.
