Chicken Panini Bread

A Panini is a grilled sandwich made from many types of bread. The bread is cut horizontally and filled with delicious ingredients such as cheese / Ham/ Mortadella / Salami or any other chicken filling and often served warm after having been pressed by a warming Grill.

Ingredients

Panini dough

  • 2 cup All purpose flour Extra flour for dusting
  • 50 gm Butter/ghee melted
  • 2 tbsp Milk powder
  • 3/4 cup Warm milk or more as required
  • 1 tsp Powdered sugar
  • 1/2 tsp Salt
  • 1 tsp Yeast

Chicken stuffing

  • 2 pc breast chicken
  • 1 Capsicum optional
  • 1 Onion
  • 1 tbsp Hot sauce/chili sauce
  • 1 tbsp Vinegar / lemon
  • 1 tbsp Soy sauce
  • 1/2 tsp Nandos creamy garlic sauce
  • 1/2 tsp knorr liquid seasoning
  • 1 tsp Ginger garlic paste
  • 1/2 tsp red chili powder
  • 1/2 tsp Salt
  • 1/2 tsp cumin powder
  • 1/2 tsp white pepper
  • 1/2 tsp black pepper
  • 4 tbsp Oil

Sauce to apply on Bread:

  • 1/2 cup Ketchup
  • 1/2 cup mayonnaise
  • 2 tsp cream cheese
  • 100 gm mozzarella cheese block cut it to thin slice
  • 1 tsp Italian seasoning (to sprinkle)
  • 1 tsp parsley (to sprinkle)

Instructions

  • Marinate chicken breast using above ingredients (ginger garlic paste,cumin powder,pepper red chili powder, lemon/vinegar, knorr seasoning) and keep it aside for 1 hour.
  • Prepare panini dough till chicken get marinated.
  • Use a stand mixer, attached the dough hook and bowl. Add in all purpose flour milk powder salt sugar melted butter and yeast.Mix in everything for 2 to 3 minutes, adjust the milk adding more if required to get the dough consistency and than knead with a hand for 2 minutes to make a soft dough..
  • Cover it using cling wrap or in a air tight container and let it rise for 2 hours.
  • Once rise divide 8 into equal sized balls.
  • Roll it into sandwich shape or any desired shape you would like to give to your bread
  • And cover it using paper towel /or muslin cloth to let it rise again for half an hour.
  • Take a pan add in 2 tbsp oil and add chicken and let it cook for 20-30 minutes.
  • Once cooked shred it using fork and keep it aside.
  • In the same pan add in remaining 2 tbsp oil add in chopped onion, chopped capsicum soy sauce,hot sauce creamy garlic sauce. Saute it for a while till the onion turns slight brown, add in shredded chicken stir it nicely. Switch of the flame.
  • Cook the panini bread on grill pan for 2 to 3 min each side on low flame.
  • Cut out the bread in a horizontal way (betweeapply sauce add chicken stuffing than spread cheese slice and sprinkle parsley and Italian seasoning.keep all the bread ready to grill.
  • Take a grill pan and keep it in low-medium flame brush oil/butter on it and warm the Chicken stuffed panini bread one or two at a time until cheese melts..serve it warm with your favorite sauce.
